Silky, smooth chocolate mousse, sweetened with maple/Blue Agave/ Monk Fruit syrup is an old recipe Vivienne found in a Convent in Morocco.  We were researching unique uses for Avocados.  Vivienne found that most good Avocados often go bad, because they are easy to over look in the fridge.  The Avocado Chocolate Mouse was part of the healthy foods the "Sisters" included in their meal  We were tasked to fix their well, so they could continue to feed over a hundred orphans under the age of 5.  It was the least we could do.  Being a Master Plumber made fixing the well one of the most satisfying part of that trip.  After fixing the water supply and sanitary issues created by over a hundred children, the "Sisters" provided a meal for the convent.  Vivienne was most impressed by the simplicity and richness of this vegan dish.
